Albinism is not a species, but a rare genetic pigmentation condition. In sturgeon, it results from genetic alterations affecting the biological pathways responsible for melanin production, giving the fish — and potentially its roe — an exceptionally pale appearance. Albino caviar can therefore occur in different sturgeon species; in the case of TAK Almas, the selection is from Beluga (Huso huso).
The natural colour of albino caviar should not be understood as one precise shade of gold. Depending on the individual fish and the roe itself, the pearls may range from ivory and pale cream to champagne and delicate golden tones. Colour alone is therefore neither a definition of albinism nor, by itself, a measure of quality.
Albino traits can also be deliberately propagated in aquaculture through controlled breeding and specialised reproductive techniques. This should not automatically be confused with genetic modification or gene editing. Experimental research in sturgeon has used methods such as gynogenesis to reproduce albino traits, while separate scientific studies have also demonstrated that gene editing can induce albinism experimentally — these are distinct processes.
