Imperial Gold is born from the crossing of two sturgeons native to the Amur region: Huso dauricus and Acipenser schrenckii. Hybrid caviars developed alongside modern aquaculture, opening a new chapter in caviar production and creating expressions that did not belong to the traditional classifications of Beluga, Oscietra or Baeri.
Unlike Beluga, a name directly associated with Huso huso, hybrid caviars are often given their own identity by each caviar house. Behind those different names, the species remain the essential reference. TAK’s Imperial Gold is the expression of the Huso dauricus × Acipenser schrenckii cross — appreciated for its firm grains, buttery character and naturally gentle profile.
And hybridisation continues to broaden the world of caviar, with other crossings now appearing in aquaculture. It is part of an evolving caviar culture where species, farming expertise and selection matter as much as the name on the tin.
