ABOUT ROYAL RESERVE CAVIAR
Kaluga caviar comes from Huso dauricus, a remarkable sturgeon species native to the Amur — or Heilongjiang — River basin, the great water system running between China and the Russian Far East. Closely associated with this vast river and its estuary, the Kaluga is one of the world’s largest sturgeon species and is often compared to Beluga for its impressive size and the generous dimensions of its roe.
Today, Kaluga has become one of the great successes of modern caviar aquaculture, particularly in China, where decades of expertise in sturgeon breeding and farming have established the country as a major centre of premium caviar production. The species matures slowly, with females requiring many years before producing roe. Pure Kaluga is particularly appreciated for its large, beautifully defined pearls and generous texture.
Pure Kaluga should also be distinguished from the widely available Kaluga Hybrid, a cross between Huso dauricus and the Amur sturgeon Acipenser schrenckii. While both can produce excellent caviar, they are biologically different products. At TAK, when a caviar is presented as Kaluga · Huso dauricus, it refers to the pure species.
